Advanced Fermented Beverages! November 17, 1-4pm
This workshop is for folks who have already taken our Beginning Fermented Fruit Soda workshop, or who have a good base of knowledge about wild fermented beverages. We will put ourselves in the mindset of the microbes, and learn how to make sodas and similar beverages when fresh fruit is not desired or readily available as a main ingredient to begin from. The first portion of our time together will be a presentation and discussion: fruit soda review, looking at microbial behavior in short-term sugary ferments, options and strategies for fermenting with less or no fresh fruit, and Q&A. We will taste a variety of fermented drinks and snack on fermented veggies from our collection. Each participant will then create a beverage to take home and ferment from a variety of ingredients that we will provide. Every participant will receive a handout with tips, instructions and recipe suggestions.
